In manga and anime, knights, samurai, and similar types will address people as "kisama" - in this case they're not being rude, but simply saying "you."

Given this is a fantasy world, despite the somewhat strained atmosphere, I think the centaur is simply saying "you" to the maid, not talking down to her.
