Humans did that for thousands of years without problem.
The most important reason why we pasteurize the milk and other products nowadays, is to make sure they can be preserved a long time.
Even about 50 years ago, milk wasn't always pasteurized because a lot of people just used it withing 1-2 days, so there was no need for such a process.
I have a great uncle who lived in countryside when he was young, he often told us about thing like these and even how he sometimes drank milk righ away after the milking when he visited some member of his family who had cows.

@phantominferno and a thing to add, even now different countries have different pasteurization temperatures sweden got a quite low one while japan got a quite high one, making the swedish milk taste more and last significantly shorter, while the japanese milk got a shelf life that's more then double the swedish one however it does taste a bit more watery.
