While "sex appeal" is often the best translation, here in context it's closer to "My wife is too sexy," which while not 100% the same at least can encompass the idea of Jessica being aroused at the same time as arousing the MC.

You'll note that in English as well "colorful" can have some extended metaphorical meanings like being full of variety and therefore fascinating, or vulgar language.

You're right in that the word by itself has more meanings, and I would have given it a different title normally, closer to your idea of "My Wife Is Too Sexy", that's actually what I thought of at first, but I remembered that お色気 is the name of a skill tree she has in the game where she makes the best of her sex appeal, such as using Puff-Puffs and such. So, I had to preserve the reference.
