Even if it takes 1000 years to digest, doesn't mean the prey will survive that long, since you need to eat at least once a month, and drink every 3 days lol.

Pretty sure Sarlaccs do keep their prey alive while they digest...Yep, Wookiepedia confirms this in the Legends section on the Sarlacc page.
