Being that Dipper is a bit of a nerd and has great interest in the supernatural, I could see roleplay being a relatively good way to keep any romantic relationship spicy and exciting.

Pacifica obviously likes fashion and is obsessed with beauty (sadly a development trait from her horrible parents) but the comics have shown that she's growing to enjoy the simple things in life and to not be so stressed out over high-end lifestyles through her continued interactions with Dipper and Mabel.

Of course, her strong personality and pride would also likely choose roles where she gets to dominate Dipper like what we see here.
