I think it is less that they don't want to switch and more that they are unable to control the switching. Because, as you have seen, it is causing very inconvenient problems with their daily life.
However, it is also true that just because something is enjoyable, does not mean that you will want it all the time or that you would want it at all. Narcotics come to mind as a clear example.

Plus, life is complicated and hard enough without having to add the extra layer of being both sexes. I would think that most people wouldn't want to deal with that.
