Sheik is female yes, because she is Princess Zelda in disguise. That said, some people like to argue that because of the fantasy nature of the LoZ series that Zelda magically swaps genders when in her Sheik disguise. Of course, Nintendo says this is not the case and Zelda is always female, even as Sheik. Of course Nintendo also says Bowsette isn't real, but the fandom is going to do what the fandom wants to do.
