I thought the joke was pretty clear. If the cows in this story looks like human females, it kind of makes amusing sense for the human females to in turn look like cows.

Edit: Looks like Thetsuuyaku made a correction on the last page between the time this manga was uploaded and when I downloaded it from his blog. I can see how the one here can be less clear.

The author simply made a twisted reverse perspective ending. It's the type of ending the new version of Twilight Zone would have. It would be more interesting if some of the bigger name doujinshi authors did this in order to "introduce" this type of ending to the masses that complain about how every doujin is the same. Doujins like this one would expand their vocabulary.

Awesome! I like it when they draw cowgirls in as just being dumb animals. Versus say..
