I know that hunting has been around since the food web was established. The advent of farming really was the birth of systematic 'professions', since it allowed humans to produce a lot of food while staying in a single location. Which was perfect for encouraging the growth of crafting professions, since the crafters could just trade for the produced food.

So the key here is 'trade' and/or 'services' of some sort.
