why is the last chapter censored?

The whole thing is censored. As to why? Japan. That's why. I assume the lightsaber censorship in the last chapter is more of a combo of Japan + the Olympics.

You could say it's because this is an official tankoubon compiled with chapters taken directly from the magazines they showed up in. The first four chapters came from Megastore Deep, a less censored magazine, while the last came from Hotmilk, a heavily censored magazine. So unlike what Henric is suggesting, it has absolutely nothing to do with the Olympics, but still has everything to do with Japan.
