When you think about it, age range wise it'd actually have made a lot more sense for zuko-katara and toph-aang to be the pairings. Both following a diametric "oil and water" pattern of air-earth, fire-water.

they know who the dad is he just isnt in the show and it's very likely he died like most of the avatar gang save for those that either went into a seclusion of sorts or were Zuko... which is enough explination in and of itself.
