Okay, there is definitely some symbolism going on here.
-I think the important line is when she says her lack of hands means she can't grab onto anything - so she couldn't stop her family being kicked away.
-The things her family says to her show they treat her more as a servant or errand-girl than a daughter. They just use her for their own satisfaction. She's now living on her own in a mostly empty room. The fact Kamiya thinks it was a good thing that her family was kicked away might mean she had some family problems, too.
-In contrast Kamiya is helping her expecting nothing in return, and she's clearly moved by that. He's also willing to take her cold to help her get better faster. This gives her hands in her next dream to pick him up and hold him close to her, and protect him from Ronaldinho. She compliments his cooking, which was another act of kindness from him to her.

Now so far the message is a simple one, 'mutual kindness is the key to building bonds', but there are two more subtle things that I couldn't help but notice.

-In her first dream she wears white innocent clothes, and in the second she's wearing a more mature, provocative black dress. She's grown up, and I think that represents a realization of some sort, or a readiness to form relationships.
-The necks and arms are still bleeding: fresh wounds. They weren't just removed by some dream magic, they were cut. Separated, and by a conscious act. I feel like I'm not reading into this bit enough, but at the basic level this is another tie with forming or abandoning relationships.
-The heads on their own represent their egos, ie. their selfishness. That's all she remembers of them. Kamiya's head is silent, because he doesn't ask anything of her - he's fine if she's there.

I think the real key is Natsuki's feelings of who she can help. She felt out of place in her family because they only wanted a servant: no matter how much she did, she was only doing trivial things, and didn't really feel she was contributing anything. Kamiya is the first person who valued her for who she is, and because of that she feels like she's genuinely helping someone by being there. That's why she's lifting his head and not the other way round.

The ultimate message is how important it is to make someone realize they're valuable.

PS: I'm not a sports guy so I don't know if there's any significance to the fact Ronaldinho is famous for his assists, but really I think that's quite enough for now.
